Want to raise your live-fire cooking game? Kadai, sponsors of Ludlow Food Festival's Fire Stage, have teamed up with talented 'Shropshire Lad' live fire chef Adam Purnell to share some recipe inspiration. 

First up is an exclusive recipe from their cookbook 'Cooking with Kadai'. The book is a celebration of all things fire & food, born out of a love for being outdoors and entertaining on long summer evenings. More than just a cookbook, it explores multiple cooking techniques and gives valuable tips on how to raise your live-fire cooking game. 

Blackened Beetroot & Whipped Feta Salad with Spiced Oil 

'Dirty' cooking is a unique way to cook on the Kadai, utilising the hot coals or embers to bring an irresistible flavour. Cooking the beetroot in this way is incredibly delicious, brimming with a rustic and earthy taste. From burying into the coals each beet will have a crispy skin and soft centre. This makes for a well-balanced salad with whipped feta, lemon and edible flowers - a perfect summer recipe.

Prawn, Cashew & Coconut Curry - Shropshire Lad 

An old favourite from the Kadai team is this irresistible prawn, cashew and coconut curry from Adam Purnell (AKA Shropshire Lad). This delicious curry is served with Bombay potatoes and was cooked in a traditional Kadai cooking bowl, mirroring the methods used on the streets of Rajasthan.

The perfect summer barbecue recipe to impress the guests is Adam Purnell's Tapas Feast. This recipe truly shows the versatility of Kadai, utilising different heat zones and accessories to cook each dish to perfection. Featured in the recipe is Chorizo in Red Wine, Aubergine with Prawn Salt, Spring Onions with Romesco Sauce, Tortilla Espanola, Fried Calamari and Grilled Clams and Wild Garlic Butter.
